Beef Au Jus Gravy 9PT

Beef Au Jus Gravy is perfect for a French Dip sandwich or to accompany roasted meat like Prime Rib of Beef. It can also be thickened to make beef gravy. To make this from scratch you would need to roast some beef bones and gather the pan drippings.

Sometimes this isn't feasible as with French dip sandwiches, or you wouldn't have enough drippings from your beef prime rib to serve your guests at dinner. That's when this shortcut version comes in handy.

In this recipe, we are using ingredient s that are gluten-free. The thing about gluten-free is that all brands are not created equally so as always you have to be diligent in reading the nutrition labels.

Homemade Beef Au Jus Ingredients and Tools:

Ingredients:

  • Beef Stock – I start with unsalted Beef cooking stock. If I do not have homemade stock, I use Swanson brand.
  • Beef paste – I use Better Than Bouillon brand which is MSG& Gluten-Free. EDIT: Better-than-Bouillon is no longer printing gluten-free claims on their packaging labels. Be sure to read the product labels if you are concerned with gluten-free.
  • Worcestershire sauce – I use Lea and Perrins because I prefer the flavor, it is also gluten-free.
  • Salt and Pepper, to taste after the sauce has been combined so as to not over-salt the sauce.

How to Make Beef Au Jus From Scratch:

  1. In a medium saucepan [paid link] bring Beef Stock to a boil. Reduce heat to medium-low and whisk [paid link] in the beef base, Worcestershire sauce, garlic, salt, and pepper.
  2. Add in strained pan drippings without the fat (if also preparing a roast).
  3. For gravy, thicken with cornstarch.

How to Serve Beef Au Jus:

We serve this beef au jus recipe most often as an accompaniment to our Prime Rib dinner. But this has many other purposes. like French Dip Sandwiches!

The best French Dip Sandwiches are made from the leftover prime rib or roast beef. We actually use this au jus as the base of many other beef gravies and it's excellent served this way over meatballs or mashed potatoes.

Classic Beef Au Jus Gravy is perfect for a French Dip sandwich or to accompany roasted meat like Prime Rib of Beef. It can also be thickened to make rich beef gravy.

Classic Beef Auf Jus Ingredients:

  • 3 cups Beef Stock, unsalted
  • 1 tbsp beef base Omit for GF, [See Note 1]
  • 1/4 tsp granulated garlic
  • 1 tsp Worcestershire sauce [Lea & Perrins is GF]
  • Salt & Pepper [to taste]

Thickener for Gravy:

  • 1 tbsp Corn Starch [optional – for thicker gravy], GF
  • 1/4 cup Water [Optional – if thickening into gravy
  • In a medium saucepan bring Beef Stock to a boil. Reduce heat to medium-low and whisk in the beef base, Worcestershire sauce, garlic, salt, and pepper.

  • Add in strained pan drippings without the fat.

  • If desired. thicken into a rich gravy by adding corn starch into 1/4 water and stirring into a slurry. Pour into the boiling Beef Stock to thicken. Corn starch needs to heat to a boil to activate the thickening agent.

  1. Beef Base – I use Better Than Bouillon brand which is MSG-Free but it is no longer GF. EDIT: Better-than-Bouillon is no longer making any gluten-free claims on their packaging labels. Be sure to read the product labels to find a product that is gluten-free. This is an overall flavor enhancer and can be omitted but cannot be used for those with gluten sensitivity, intolerance, or celiac disease.
